I do some research on the companies behind job postings before applying, and only apply if I think it has chances to be a place where I would like to work. That makes it quite easy to answer that question. I simply point out the things I've found out during my research that made me think it was an interesting company and worth applying to.
Usually it's a mix of liking the product/service they are building, perceiving a good culture and using a tech stack that I'm interested in.

I've only been asked this question three times so maybe this is naive but I usually just tell the things I like about the company and what I have been able to find out. I've mentioned things like the stack, location, perceived culture of the company, etc. I'm actually pretty interested in what others usually say 👀😅
I think it is quite a good strategy to go.
My way is to plan first where I want to be with my career, find interesting companies that could offer a position or growth in the direction I want to be.
At the interview, that's my answer to that question and they usually like that I have clear ideas on my future as well as that I choose them to grow in my career.
