When LEGO announced they’d retire the Mindstorms line recently, I felt a bit sad given how my first introduction to programming was through the LabVIEW based environment on the NXT.

I wish I had gotten more into Mindstorms, but I definitely love LEGO!
I've really been wanting to get some LEGO Mindstorms sets to use in conjunction with my Teenage Engineering OP-1 to automate some spinning of the knobs like in this YouTube video.
Sounds like I might have to pick up some used gear if I wanna make that happen!

Forreal! And yep, you're right that the ones in the videos are official adapters.
They make some really cool partnerships... for instance, they partnered to make specialized Pocket Operators for Rick & Morty and Street Fighter. Side note: if you ever decide you wanna tinker with synthesizers and making beats, they're a really great entry point!
